Coleslaw!

Lydia Manx shares her recipe for quick and easy coleslaw.

I kept saying I was making coleslaw with dinner on Wednesday. I haven't made coleslaw in at least fifteen years. My ex-hubby used to like a sharp coleslaw with 3/4 white cabbage, 1/4 red cabbage and grated radishes. My mom is more traditional and only likes white cabbage. She began telling me the recipe off the top of her head and from there I improvised. Milk isn't something we keep in the house but mocha mix is always there. So I tossed this together.

  • Mayo (about 2/3 cup)
  • three or so tablespoons mocha mix or milk
  • teaspoon vinegar
  • pepper
  • sugar
  • celery seed
  • garlic powder

Blend to taste then toss with finely chopped white cabbage. Salt top lightly and cover with saran wrap. Refrigerate for an hour or so. Taste before serving. Mom said it needed more sugar. You see there are NO hard and fast measurements. Basically it's according to each person's preferred flavors. I'd add radish and red cabbage for me with a dash paprika.

Eep....don't forget to add dry mustard powder (around teaspoon) and I also add shredded carrots and crushed pineapple or golden raisins to sweeten.
